Looking for an easy and healthy side dish? Try roasted beets !! I never really liked beets, until I tried them roasted… I am sure you will like this quick and easy recipe too (except for the stained hands – you may want to wear gloves while peeling the skins)
6 – 8 Beets, scrubbed and trimmed
Costco Organic no salt seasoning (or use any blend of various herbs/spices)
Basic vinaigrette (1/4 cup grape seed oil, 1 tsp of balsamic vinegar, 1 tsp of apple cider vinegar, dash of salt and sugar)
Tzatziki sauce (I cheated – used store bought from Costco)
Spring mix lettuce leaves
1) Place beets in foil squares individually. Sprinkle each beet with a little kosher salt, and wrap each beet in foil.
2) Bake at 425 for about 45 minutes. Let beets cool, then peel off the skins.
~ Slice the beets and place on a serving dish. Sprinkle a little seasoning , and pour some vinaigrette over the beets. Garnish with pomegranate seeds (top picture)
~ Or, you can dice them up and mix with the vinaigrette; serve over greens and top with tzatziki sauce (bottom picture)
