Caprese sauce

My bestie is coming over for lunch today…I prepared this simple pasta sauce…will serve over fresh fettuccine… Ciao!

P.S.  (a few hours later…)  My friend loved the pasta sauce! and so did my son!

I made it quickly and here’s basically what I did:

In a large saute pan, heat  3 tbsp  olive oil and  1 tbsp butter.  Add chopped  shallot (1 large) , and minced garlic (5 – 6 cloves).

Saute until translucent and fragrant.  Now add in chopped vine ripened tomatoes (5 – 6 medium).   Saute for few minutes, and added in small handful of chopped fresh basil.   Add in herbs and spices:  black pepper, salt, parsley, oregano, crushed red pepper.

To make the sauce a little thicker, and more flavorful, add in 1  1/2 cup prepared jar tomato sauce ( Classico  brand is good) …. you don’t have to do this – you  can keep the sauce light with  just fresh tomatoes.

Cover and let the sauce simmer for a few minutes.   Meanwhile boil and drain your pasta (reserve about 1/2 cup of the water)

Plop some cilingini (small mozzarella balls) into the sauce.   Add  in the pasta and the reserved water to the sauce, and mix well to coat the pasta.  Serve and enjoy!
